250 gms Chickpeassoaked overnight and boiled

to taste Salt

1/2 tsp Cumin Powder

1/2 tsp Kashmiri red chili powder

2-3 cloves Garlic

1 tsp, roasted Sesame Seeds

2-3 tsp Lemon Juice

2-3 tbsp Extra Virgin Olive Oil
Directions
Hummus is a dip or a spread with its origin in Arabic cuisine. Made of chickpeas, it’s extremely flavorful and best served cold with Pita Bread and Falafel or a Fattouche Salad on the side.

Soak the chickpeas overnight. Boil them in the morning until soft and retain the boiling liquid. Let them cool down. |

In a small mixer jar, take the roasted sesame seeds and grind to a fine powder. Add extra virgin olive oil and whisk again to form a tahini paste. |

In a big mixer jar, add the chickpeas with tahini paste, cumin powder, garlic, lemon juice and salt with a little of the boiling liquid and blend until you get a smooth paste. You can add a few ice cubes too while blending as it gives you a smoother paste in the end. |

Add a tablespoon of extra virgin olive oil and give one more whisk until well incorporated and you are left with a smooth paste. Adjust seasonings as required. |

Transfer to a large covered bowl and chill for a few hours. Before serving, top with red chilli or paprika powder and more extra virgin olive oil and serve with pita bread and falafel/ fattouche salad on the side. |
