Dahi masala bhindi is a delicious recipe of stir fried okra sautéed in a tangy tomato and curd gravy. This is an easy to make dish and goes really well with roti or naan. The gravy is lightly spiced and the tomatoes and curd balance the sourness and tang in the gravy. This is a recipe that has been passed on by my father-in-law and I can vouch for his simple yet delectable dishes. Hope you all enjoy this easy peasy take on okra.

Wash the okra and wipe them with a kitchen towel. Cut both the ends and make a long slit in the okra. I used small sized okra, it if you get longer one, you can cut it into 1 inch pieces.

Heat the oil in a wok on medium flame. Stir fry the okra until they become tender. This step took about 7-8 mins for me. Take the stir fried okra out in a plate.

Take out the extra oil and leave behind just a tbsp. Add a pinch of hing and then sauté the grated onions till they become slightly brown. Next, add the grated tomatoes and and sauté them until the mix leaves oil on the sides of wok. At this time, add all the spices mentioned in the ingredients except the salt and garam masala. Sauté this for another 2 mins.

Add the whisked curd and cook the gravy for another 2-3 mins. Now add the salt, garam masala, the stir fried okra and mix well. Cook this on low heat for 4-5 mins, uncovered. Garnish with fresh chopped coriander.
