500 gms, medium diced Pumpkin

2, chopped Medium sized onion

2, chopped Medium sized tomatoes

1, chopped Green chili

1' piece, grated Ginger

2 Tsp Oil

1 Tbsp Kasoori methi

To taste Salt

1 Tsp coriander powder

1/2 Tsp Red Chili powder

1/2 Tsp Jeera Seeds

1/2 Tsp Turmeric Powder

1 Tbsp, for garnish Fresh coriander leaves
Directions
A simple, flavorsome Pumpkin vegetable that tastes best when served with Rotis or Khichdi. This recipe is easy to make and Ready in Minutes. Truly Soul Food on a Plate!

Heat oil in a pan. Add jeera seeds and let it splutter. |

Add the chopped onion and let it saute for a minute or two on medium flame. Keep stirring. |

Next, add the chopped pumpkin and the tomatoes along with the green chilli and ginger. Mix well. |

Add the salt to taste and turmeric powder. Mix well. Cover and simmer on slow flame, stirring in between. |

When the vegetable is 3/4th cooked, add the coriander and red chilli powder as well as the kasoori methi. Mix well. Simmer on slow flame till done. *Pumpkin is a soft vegetable and cooks quickly. Ensure that the vegetables are not diced too small as the vegetable can turn mushy. You can also add curry leaves if you so wish. It's soul food on a plate! |
